Back when I had the inspection board in for varroa monitoring, I noticed there was what seemed like a lot of pollen on it, at the entrance end. I made the mesh floor from a mesh inner cover that I'd been given so I'm wondering if that mesh is unsuitable and somehow causing the bees to lose their pollen load as they come in. Is it normal for some to be dropped or should I make adjustments to this in the spring?

saw them selling jars of pollen...how do they harvest that?

With a pollen trap.
Some you stick on the front of the entrance. Or you have pollen floors like the one below. All have a mesh which knocks the pollen off as they return. You only use them for s few days then remove the trap part to ensure the bees get enough pollen for their own uses.
I have a couple of pounds that I harvested this year for making pollen patties next spring.
