How to get ivy honey

If you store ivy honey in bulk for a year and warm it for putting it in the jar, the rough edge comes off the flavour and it becomes a full-bodied honey with a strong but not unpleasant flavour. Chef love cooking with it because you get more bang for your buck, flavour-wise.

Yes I can believe that
Somebody bought me a jar of Ivy honey and it doesn't taste anywhere near as bad as the raw product going into the hives smells

I kept 30lbs of ivy honey from last year as a friend beek suggested it might mellow after a year in the bucket (he cited this flavour change also happens in onion honey he'd tasted in Croatia/Serbia). A visit to South Molton honey shop confirmed ivy honey is "sought-after" and they had some there for sale. Some people love it!! Acquired taste indeed!

I seem to recall £7 a pound for ivy honey.
