Heated honey going sour?

Hi all,

A friend of mine recently heated honey for cooking and it turned really sour. I haven't experienced this myself and google doesn't seem to come up with anything useful either.

Has anyone ever experienced this?

My guess would be that the honey was not cured enough and the heating sped up the yeasts and made it spoil faster.
 
It can get very scented when it is heated, depending on what nectar made the honey will depend on the smell. Often lots of honey used in something like a honey cake can give off a very strong aroma, wrong honey and it can put you off eating it! That's all I can think!

What sort of heating (temp? time?)
What sort of pan?
What sort of honey?


Overheated honey can taste a bit nasty, but "sour" is kinda hard to credit, what with honey being about 80% sugars ...
