When I try and fill jars using the honey gate, the honey bulges over the top and back of the gate even if I just open the gate a bit. Could anyone explain the adjustments I need to make, please, either to the gate or my technique?
You need to maintain pressure on the gate. Don't let go of it
 
It's really not difficult, if you tighten the hinge screw properly, the gate will stay in place when you let go of it. I fit a lid to the full jar while the next is filling. When that one is filled, I close the gate and grab another empty jar, remove the full one and put the empty in it's place before repeating. Any drip should hang in place long enough for the switch over of jars, if it doesn't, then the wing nut is probably open too far, it only needs to be slackened enough so the gate can be opened and then it cuts off the honey flow when the gate is closed. If I leave an empty jar under the tap to get another tray of empty jars ready, I get one drip in the bottom of the jar, I could stop and make a cup of tea and there would be no more.
