Keeping a nuc as a nuc

I hope to keep a couple of nuns over the winter, as back-ups for next Spring. How do w stop a nuc from expanding too much, i.e. to the point where they need more than the 5/6 frames in the nuc? Is it just a function of setting up the nuc late in the season?
 
You can bleed the foragers off by moving it, you can remove brood, or if all else fails you can hive it.

Keep removing frames of brood, add them to your main hives to bolster them, maybe replace with foundation in order to keep them occupied.

You could also keep spliting them and adding queens and make more nucs.
