How do I know when they've got enough?

I am feeding two of my colonies, one in a nuc box, one in a full-sized hive; the third colony has a nadir of honey and is well-supplied. I have been feeding for 10 days now and every other day I put in more syrup, are they just going to keep taking what I give them until the hive is bursting with stores in which case I could be there a very long time, or will they start to take less and less, in which case I can stop feeding?
 
Buckfast hybrids will need 18 liters to get them through to Spring, although beeing greedy can need more if we have a mild winter!

The local native black (Dark) Cornish Amm are much more frugal with stores.
