honey to much water content

I have approx 4kg of honey with far to much water content in it on the refractometer scale the whole screen is blue ! is there anything that can be done ? I'm not realy a mead drinker and cant afford the calories/sugar content of to many honey cakes and biscuits. If I dont do something with it soon it'll start fermenting!

Freezer will def slow down any fermentation to + or - zero with the tolerance not being worth worrying about - that is what we do with lots of food for storage, surely, and use as/when required!

That or feed back to the bees either now (getting a bit late) or in the spring, after removal from the freezer and allowing to warm. :biggrinjester:

Does anybody know what percentage of water is accepted in rape honey to stop it fermenting I had heard that the number varied between plant species.

If the moisture content is high when I am extracting,- at the end of the day I leave the lids off the buckets and turn the de humidifier to the highest setting, seal up the extracting room,and leave overnight, this solves the problem for me.
