I extracted some honey a while back and it was lovely and runny for over a week, however after one week it slowly started to set and it now reassembles lurpack in consistency that has been put in the freezer.

Will i still be able to seed it in the jars with a spoonful of runny honey and give it a good stir or is it a lost cause, it is still possible to scrape a spoonful out put i would like it too be a bit more usable.
 
Put it somewhere warm overnight, e.g. the airing cupboard, or stand it in a bowl of hot water. The idea is to get the temperature up to around 30-35C without going above 40C.

Alternatively, scrape it all out of the jars into a bucket and warm it up until it melts. Then mix in some creamed honey as a started & whisk it until thoroughly mixed. Then fill the jars and leave to cool. The idea is to cause it to recrystallise using the fine crystals in the seed to ensure that it recrystallises with similar small crystals, producing creamed honey.

Mine is like that set honey in that jar what is added to the runny honey, however i do not have any runny honey to mix it with, could i not just warm the jar up and add a few spoonfuls of runny honey, basically opposite to what has been done in the video or will it not work.
 
It seems that you have the right consistency already.
The question is, "Will it stay like that or set solid?"
You can ensure that it stays nice and soft by setting it properly.
The honey will set on the largest crystal. If you want to make sure it's creamy then take half a jar of your set stuff and grind it down in a pestle and mortar till you can't feel any gritty bits in your mouth.
Warm the rest till it's clear and runny. Then use your ground up stuff as the seed.
Do not whisk air in. If you have only a small amount then just stir and stir. You can buy a stirring corkscrew thing that goes on a drill for larger amounts made in a bucket.

No it won't work the other way round. All that will happen is the runny honey will set to the consistency of the set

:laughing-smiley-004, how do i know it is clover honey though ? , it might say that on the label but you never know these day's, hopefully i will not need too seed anymore this year as they are on more than enough thistle and wild flowers that will soon be popping up.
