I have one colony which developed from a nucleus in June. The colony has one full super on. Can this be extracted or should this be left for winter stores,

Your in a similar position to me, my nuc was installed in my poly hive end of May. It's got a full consignment of honey now and we've had a little sample from moving the frames around, tastes amazing.

I'll be extracting a few frames and leaving the rest. Second super has got some stores but still needs lots of drawing out, so I'm hoping it stirs them more into action to fill those too by taking a little.
 
If you leave it on then don't forget to take the queen excluder off. Personally I would extract the honey at £7 per pound and replace with sugar water at 50p per pound. Enjoy the honey.
