Doing honey up for jars. I have uncapped honey mixed with capped honey. Should I do something before I jar it. Maybe one frame out of ten.
 
Make sure your mixed honey meets your countries minimum water content. Ours is 20% maximum for most honeys (23 for heather), not sure what yours is in the states. Uncapped can often be below the legal limit but mixing with capped can bring it all back into legality. Otherwise dry with hot air to legalize before extracting...a refractometer is a very handy piece of kit for measuring your water levels..
 
I've often spun out uncapped honey. It is OK if the shake test shows there is no nectar present.

Bees don't always cap honey -perhaps they don't want to waste time and energy on capping when it may need uncapping shortly, or the cells are not completely full and are awaiting top up before capping. Sudden cold weather can catch them out, too.
 
But be careful, in my experience honey with a high water content settles on the top.

Mix them well.

No! Better to avoid any chance of a problem by avoiding extracting higher water content honey/nectar.
 
My comment referred to when they were already in the same bucket, it prevents the higher water honey rising as Enrico has observed if they are well mixed.
