    Looks like ling heather to me. It will make a good blend, one part heather to two parts of any other honey. You'll love it.

    I use 10-frame castellated spacers in a National super. I use only thin unwired foundation, because I'm concerned about bits of wire getting in my heather honey, which I press out.     I used to get cut fingers too. I've now removed the sharp corners on the castellated spacers. It's also much easier to load frames to the super.

    Air bubbles are a feature of good heather honey.

    Heather honey separating

    The honey in the picture looks like it is fermenting. I always blend my heather honey, one bucket of heather to two buckets of whatever else is available, into a soft set blend. I store the jars in a cooI dark barn, and very rarely get jars of heather blend fermenting.

    Yes, and it continued for several hundred years. Nowadays, we are quite happy for the indigenous people to trade within the Town Walls, eg. people from Anglesey BKA!

    The Honey Fair is a unique privilege for us. We are quite happy with weekdays. Saturdays are too busy in Conwy. If the Fair date falls on a Saturday, it moves to Friday, and if on a Sunday it moves to Monday.

    I've never much liked the sharp corners on National hive castellated super frame spacers. I quickly remove the corners with an angle grinder. The supers are safer to use and easier to load with frames. One for the manufacturers to consider, maybe...
