Basic question...if you have a 3 frame mating NUC should you keep feeding what they can take? Or limit?

for any sense of proper bee keeping you need minimum 2 hives and for minimum "certain" bee keeping you need 3. So you are doing great... :serenade:

Ive had decent success with a couple of these NUCs in raising two lots of new queens from splits ie 2 x NUCS x 2 chambers so 8 queens. Actually the second cycle is about a week away from queen emergence. My question is how much to feed? Ive kept them pretty topped up - If you give, they take it...

Well...I just went with a basic newspaper, no cage. Will give them 24 hours and see. They will or they won't.
