That works two ways. If they think it is going to run out then they buy in bulk and you get a queue when the new season honey comes in. Also, it always looks at its best just extracted. As long as you sell it it doesn't really matter how you do it☺️
I have 12 oz hex at the gate but say they can ring for 1lb round jars. £6 v £7.50 so more honey for your money in the bigguns. An amazing amount go for the hex for presents and the pound jars for themselves!

All my honey this year has been like water and still is. No signs of any crystalisation at all. Never had honey like it. I think it is the lime and blackberry.
Customers love it and had huge sales this year.
The only problem you may come across with that is if you have put in the QX and then get a really cold spell they have a large area to heat with a barrier in between.

We get ours growing inside in a well lit room that never goes below 12⁰ end of Jan beginning of Feb but we use a grow light to stop them going leggy.
You really need something to keep the rain off them to reduce the chance of blight.
