Temperature for soft set honey

Hello All,
Last year I started producing soft set honey and it sells really well but the problem is that my last batch was produced in winter and the optimum temperature of 14 degrees for the crystalization process was easily obtainable but now I need to make more and I am finding that the honey is just not setting as its just to warm, I have no cellar and no other means to obtain 14 degrees.

How do other beekeepers manage this problem or should I just make this type of honey in winter?

Put your honey bucket in a larger container with some cold water, refreshed with ice as required?

I thought that it will still crystallise at higher temperature but it will take longer.
 
Just a thought, why not blend in a quick setting honey like osr?

or dig a whole in the garden, I don think its more that 14' c a foot down in the soil.

If you have 16 colonies what did you do last year?
