How readily does a dangerous (to bees) level of HMF build up in granulated sugar syrup? I set out to make a large batch of 2:1 syrup in a stock pot, and inadvertently left it boiling for about 20 minutes. Am reluctant to discard the lot but would have to if it would constitute a significant risk. Am feeling really stupid to make such an error!

Thank you. I have prepared more syrup (correctly this time) and will mix the two and get it on now.

I would be interested in hearing about any reasoning that would support this.

In them olden days ..... We used to boil our sugar to hard ball, pour it into a container and put the block of boiled sugar over the feed hole!....never had any problems.
