I'm making some crown boards and plan to buy a hole saw + arbour.

Which diameter should I buy?

Plan is to have some with and some without holes.

With holes for contact feeder and fondant.

No need.
Bees prefer a frame feeder and less risk of flood.

Put your fondant directly on the top bars.

Hole saw? What's wrong with a router? Easy job, once set up with a jig.

If I need a clearer board, I usually cut it with a jigsaw, if using Porter bee escapes. Bees don't care!

If cutting ply, the average cheap hole saw will not last long.
