I heat in a water bath at 55c for 45 minutes with lids on tight then place into iced water until the jars are cold. It may be necessary to replenish the ice from time to time.

What sort of water bath please?

I have a Kochstar Warm-Master (see my post 33 above). I use it for both warming buckets and for jars. I can warm about a dozen 12oz jars at a time.

Ah, but that's a bit limiting if you need to process 50 jars at once. That's why I jar the last 1/4 contents of the settling tank into jars then oven @ 50C for an hour to give runny version. The first 3/4 crop in the settling tank goes into buckets for future melting to make soft-set.
