Almost finished harvesting this years honey and found a massive difference in moisture content reading from 16.7 through to 20.1 presently in a number of 10 litre buckets.
Have my 20.1 & 19.8 readings with the dehumidifier at the minute but thinking could I mix them to average out the reading?

for example (keeping the numbers simple for the purpose of my theory) would this work?

10 litres at reading 20.0 moisture
Mixed with
10 litres at reading 10.0 moisture
Would give
20 litres at reading 15.0 moisture

or is it not that simple

The wet honey will float, test a jar from the bottom of one barrel and one from the top of the same barrel and see if that differs! I can often get a couple of degrees difference. I keep jarring up until I reach the wet layer!
 
Ok so this is what I did.
Mixed it all together in a 100Kg settling tank, left the lid off & dehumidifier running for a few days.
Tested at intervals during jarring and got readings from 17.1 - 18.2 so happy with that
