Yes I have, and yes you can (use any old honey).

Either way, you'll still be making mead - you'll then just be adding the acetobacter to it to turn the alcohol into vinegar. There, I created my own mother of vinegar culture by putting a small amount of unfiltered ACV in a jar, and occasionally topping up with dregs of cooking wine.

I used ivy honey (yuck), and the (vinegar) results were disappointing. The mead, and then the vinegar, retained a heavy ivy aroma (not to my taste), and - even though I was scrupulous about sterilising containers etc... I had mould growth on the top of the vinegar.

Yum yum; Tasty.

Worth a try though ! If any good, it would command a premium price :) ... Good luck
