My father used to make this. I remember as a child watching fascinated as this stuff rose up like a volcano

Recipe is a doddle
200g golden caster sugar
100g clear honey
4 Tablespoons water
1 tbsp bicarbonate of soda

Dissolve sugar in water and honey
Boil slowly to 149C
Whisk in bicarb and turn into a greased tin

This is greatly appreciated Dani and is just what I was looking for.
Cheers
Dave

When we have made it we used a really deep preserving pan that is normally used for jam and one of those metal thermometers with the temperature shown in a dial on the top.

Thanks Erichalfbee for recipe , made some this morning, lovely. you can really taste the honey flavor come through. Never thought to try and make it before.
