Hi all
my local baker is letting me have 12.5 kg of fondant for ?8.70, how long will it stay fresh, can i freeze it?

I can't see it going off. Just keep it somewhere cool. The main danger to its quality will be it drying, so bag it if it is not already well sealed. Freezing it isn't necessary and would take up useful freezer space.

I purchased double rations last year so I had enough for winter 2009.

Do as Gavin says and it will be fine.

What the bees did not eat as fondant, I have made into a simulative feed (approx 1:1) by putting the dried fondant in a bucket and adding just enough water to disolve it.
