Just thought I would give a handy tip when making syrup. I have just purchased a diffuser that spreads the heat when cooking. They are quite cheap from e***y. What it means is that the sugar does not get stuck or burnt on the bottom. My maslin pan has never had it so good, and I can leave the syrup for a couple of minutes now before stirring, which previously was not an option!

Ummmm.

Maybe I'm the odd one out here, but I don't mix syrup on the stove.
I add hot water to the sugar, stir, leave a few minutes, stir again, and leave to cool.
Works fine for my (smallish) quantities.

All that said, 'flame tamers' definitely do have their uses.
Just not needed for making syrup.

Actually if you can pump it it mixes in cold water. A single tub washing machine if you can find one is a massive asset.
