I have some thin roof metal to cut. What is the best way to cut to get nice straight edges and not jagged?
 
what metal, steel or Aluminium?
if steel, use the 1mm cutting disks in a grinder and use a piece of wood as a guide, just run the disk along side the wood.

Aluminium, as Cheers suggests, guillotine, tin snips or if really thin have used very large scissors but watch your fingers as you cut.
 
If it's thin aluminium you can cut it by scoring with a Stanley knife using a straightedge.
 
If it's aluminium and you happen have woodworking machinery then it's possible to use a bandsaw or table saw with fine blade. A zero clearance insert is a help too.
 
A jig saw with a metal cutting blade works for me
