Bee fondant recipe

I have found this recipe online for bee "fondant"

3 parts of icing sugar
1 part of your own honey heated to 40 Celsius
1 cup of pollen per kilo of mix (optional)

Everything is mixed thoroughly into a paste that thickens as the honey cools.

What is your opinion of it?
Seems easy to make...

Don't, seriously, don't. :nono:


It's just too much hard work.

Plus, if you add the pollen, that's not fondant, it's a pollen patty.

From the description it says that you can use a stand mixer with the dough hook for small quantities, or a bread mixer like they use in bakeries if you make a lot of it, as long as you work it before the honey cools down

Plus, if you add the pollen, that's not fondant, it's a pollen patty.

With the addition of pollen it's called a "proteic candy" (candito proteico)
Even without the pollen they use a different word in Italy, not the word that is used for baker's fondant: they use "candito" for the stuff given to bees, as opposed to "glassa fondente" which is the term for baker's fondant.

Even easier to buy from a local bakery or Baco wholesaler.

They use a different word in Finland as well...leipurit konvehti.

I doubt I'll be able to find a Baco wholesaler in the province of Florence, but I will try and see what the local pasticceria is willing to sell. I just like to look for alternatives, so that I start off with a plan B and possibly a plan C ready. This has served me very well in dealing with my aquariums...

It'll cost more but Simon or one of the other ebay shops will no doubt ship to you.
