Accident or what?

Evening I have this Heather honey which got processed the same way as all the rest, but this honey has gone like creamed honey it's creamy and tastes strongly of Heather, I have other jars which are still thixotopic also some that are thixotopic and grainy.
All have been stored at 8c - 12c

Any separation of the honey can’t really tell from those photos. Had they all been bottled together?

sounds like there was a high level of floral honey amongst the heather - it happens

That just what my heather blend looks like. More blend than heather
