Its strange, I can never been able to countenance the use of honey in cooking and HMF

I regularly use honey when I bake wholemeal and rye bread, (around 1 tablespoonful for 550 grams flour) gives a great hint of sweetness to the finished loaf.
 
It’s lovely on porridge in winter.
 
Smoked deboned pork neck basted with Honey... Slow cooked with ,,,,,,,, shoo getting hungry...

The only thing you need to remember if adapting recipes that usually use sugar is that honey is liquid.

I entered a competition a few years ago for honey biscuits and nothing I or my fellow contestants could do would get the biscuits to be crisp. It turned out the organisers had just substituted the same amount of honey for the sugar in the recipe provided and not made any allowance for the honey being a liquid.
