This is exactly what I use, but it's been sharpend within an inch of its life as otherwise as mentioned, can crush the comb. I've a very cheap, but wickedly sharp knife bought from IKEA that is used for chunk sections.

I've a set of wooden handled victorinox butchers knives that were inherited from a relative that I feel exactly the same way about.

We have two from Lyson, the largest is 50mm bore for filling/emptying barrels and the small carry around that works off the sump & is 40mm bore. The big one is overkill as will empty a barrel in minutes. Neither has caused any issues and are easy to clean after use.
