I don't know where in Scotland you are, but do a search for bakers supplies (then your town) Scotland. Hopefully you should get a link. Alternatively ask at your local bakery and they may be able to tell you where they get their supplies from. I found it impossible to make my own

Yes they do, but be careful. When I remove the hood of my suit, the head hole is 33 inches circumference. I did find a replacement hood on the web, but it fits a head hole of 37 inches, hence to wide.
