    Yes, smaller selection but some interesting varieties. I recently did their online seed saving course (I’m a seed librarian) and it was great. We don’t have any seed companies in Scotland...yet.

    Yes, that’s why I’d rather just drink it. Feels such a waste to boil it all down. I’d say the waxing moon is a good time to tap too!

    No, I just drink it straight. I could have boiled it down to make syrup (my preference over wine) but really, I just like drinking it straight out the tree.
